This tea is a true survivor from a different era. When many people moved to Taiwan from Mainland China in 1948 they brought many tea plants with them. This tea is an example of Rock Tea or Yancha which grew in China. This tea is not rolled but rather traditionally dried and left open leafed. The taste this tea gives is so old and deep it is hard to describe except for memorable. Forest tastes mixed with light astringent and sweet all together. It is smooth and silky and steeps many times with great flavors that change as you go. New flavors emerge as the front flavors fade.
It is best to steep once and let the leaves rest for 2 minutes to absorb the moisture. Some drink the first steep while others discard it to wash the leaves. A true masterpiece tea.
